When I was growing up, my favorite time of the day was dinner. It was the time when all five family members came together to eat and talk about how their days went. But my sisters moved on, they cook themselves. Bad food sometimes...

I still live with my parents and my mom is in charge of the kitchen. If I do something wrong and touch one of her things, she would notice and get upset...sometimes. And so, I look forward to those days when my mom has busy plans for the days. The first time she was away from home...like really away. In China. I decided to make scallion pancake. I made a mess in the kitchen, but, of course, my mom did not know. hahaha.

In order to make the delicate, thin fried pancake, I make the dough out of scratch and repeatedly pound on it to achieve the thinness. It is later fried on a pan with onions and sometimes mixed with soy sauce or any other sauce. 

The first time I made it for my mom I mixed it with rice. I put rice on top of it and some spicy sauce on it. I was inspired by the Indian cuisine which reflects upon the specialty of being a New Yorker. There are so many different types of cuisines in New York to try. I can never get bored.

So I will like to make scallion pancake with rice and/or other ingredients.

Presentation: A type of ceramics ware or weaving basket that tells a similar story. What you are holding while eating also creates an experience.

**Still need to think of a particular presentation because usually we just plop the food on the plate.

There will be an excessive execution of each flavor to have a poignant aftertaste.
